Carsic calcareous origin, rich in iron and aluminium
sesquiossids(typical Salento red soils) which give
warmness to the ground.
Harvest base per hectare
After being lightly dried up on stumps, the grapes
undergo to a very long maceration (25-30 days).
Fermentation occurs in temperature-controlled
tanks(25-26°) and purposely selected yeasts are
added. Malolactic and alcoholic fermentation occur at
the same time.
Colour: intense red with shades.
Flavour: sweet, harmonious and velvety.
Serving suggestions: spicy cheese.
Serving temperature: 18 ° C.
